Homemade KFC Zinger Burger Fakeaway

Recreate the iconic KFC Zinger Burger at home with this easy and delicious recipe. Crispy, spicy fried chicken in a soft bun with cool mayo – the perfect Fakeaway!

Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 250ml buttermilk
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp cayenne pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder

For the Coating:

  • 150g plain flour
  • 50g cornflour (for extra crispiness)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cayenne pepper (adjust for spice preference)
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp baking powder

For Frying:

  • 500ml vegetable oil (or enough for deep frying)

For Assembling:

  • 4 soft burger buns
  • 4 tbsp mayonnaise
  • 1 tsp hot sauce (optional, for spicy mayo)
  • 4 lettuce leaves

Instructions

1. Marinate the Chicken

  1. Place the chicken breasts between two sheets of cling film and flatten slightly with a rolling pin to ensure even cooking.
  2. In a bowl, mix the buttermilk, salt, black pepper, cayenne pepper, garlic powder, and onion powder.
  3. Add the chicken to the buttermilk mixture, ensuring it’s fully coated. Cover and refrigerate for at least 2 hours (overnight for best results).

2. Prepare the Coating

  1. In a separate bowl, mix the flour, cornflour, salt, black pepper, paprika, cayenne pepper, garlic powder, onion powder, and baking powder.
  2. Remove the chicken from the buttermilk, letting the excess drip off.
  3. Dredge each piece in the seasoned flour mixture, pressing firmly to create a thick, crispy coating.

3. Fry the Chicken

  1. Heat the vegetable oil in a deep pan to 170°C (340°F).
  2. Carefully lower the coated chicken into the oil and fry for 6–8 minutes, turning occasionally, until golden brown and crispy.
  3. Drain on a wire rack or kitchen paper to remove excess oil.

4. Assemble the Zinger Burger

  1. Mix the mayonnaise with hot sauce (if using) for a spicy mayo.
  2. Lightly toast the burger buns.
  3. Spread mayonnaise on the bottom bun, add a crispy chicken fillet, top with lettuce, and finish with the top bun.
